Banana pancakes

Easy breakfast ideas

Ingredients

  • 1 ripe banana
  • 2 eggs
  • 1 tsp cinnamon
  • Optional: chocolate chips, rasped coconut
  • Toppings: chocolate, berries, rasped coconut

Preparation

  1. Preheat a pancake pan on medium-high temperature.
  2. Mash the banana with a fork in a bowl.
  3. Add the eggs to the mixed banana.
  4. Stir until it becomes a smooth and fluid mixture.
  5. Add some cinnamon to flavor.
  6. Melt some (coconut)oil in the pan.
  7. Poor little amounts of batter on the pan.
  8. Optional: add some rasped coconut or chocolate chips on the still-fluid-pancake.
  9. Bake the banana pancakes gold brown on both sides.
  10. Stack the pancakes on a plate and finish with your favorite toppings.
  11. Serve with a cup of coffee or tea, and enjoy!

Mugcake

Easy breakfast ideas

Ingredients

  • 1 ripe banana
  • 1 egg
  • 1,5 tbsp oatmeal
  • Optional: chocolate chips, chia seeds
  • Toppings: berries, Nutella, rasped coconut

Preparation

  1. Take a small bowl and grease with butter or coconut oil.
  2. In this you mash the banana with a fork.
  3. Add the egg and mix under the mashed fruit.
  4. Stir the oatmeal flakes with the mixture.
  5. Add some chia seeds or chocolate chips and stir again.
  6. Put in a microwave for 2,5 to 3 minutes.
  7. When ready, turn the bowl upside down above a plate.
  8. The mugcake should fall on top of the plate.
  9. Finish with berries, some Nutella and coconut flakes.
  10. Enjoy!

French Toast

Easy breakfast ideas

Ingredients

  • 2-3 slices older bread
  • 1 egg yolk
  • 125 ml. Vanilla milk (or another plant based milk)
  • honey
  • 1 tsp cinnamon
  • Nutella or protein spread
  • Peanut butter
  • Berries or banana slices

Preparation

  1. Preheat a pan on medium-high temperature.
  2. Take a deep- or soup plate and mix the plant based milk with the egg yolk, honey and cinnamon together with a fork.
  3. Melt some (coconut) oil in the pan.
  4. Soak the slices of bread into the fluid mixture and bake on both sides until golden brown.
  5. Stack one slice of French Toasts onto a plate and spread some Nutella or protein spread on it.
  6. Spread some peanut butter on the second slice.
  7. Repeat until you have a beautiful pile of French Toast.
  8. Cut the French toasts in half to create a bigger pile.
  9. Finish with your favorite toppings and enjoy!
